What are scapes?

Today we received garlic scapes
(shown in the pic). Adam the farmer says the long green ends can be used just like garlic. It has a milder flavor than garlic. I’m about to use a little in an omelet.

Ha! Ha! That’s awesome. At my farmer’s market that I work on Saturdays, the Rattlesnake Farms folks call these garlic ‘scapes.’ Same exact look, same exact description, although I disagree with ‘mild’ flavor, after biting into them raw.
